Fruit Smoothie Ice Cream

2   Over ripe bananas 

1 Tbsp applesauce (unsweetened)

1/2 tsp vanilla

1?8 tsp cinnamon

1/8 tsp nutmeg


Peel bananas and mash thoroughly in bowl. Add applesauce, vanilla, cinnamon and nutmeg, blend well.

Cover and place in freezer for several hours. 

Coconut Bounty Cars

 2 ½ c unsweet coconut flakes
 1 c melted coconut butter
 ¼ c honey
 1 c dairyfree chocolate chips

 2 ½ cups  unsweet coconut flakes

 1 cup melted coconut butter

 ¼ cup honey

 1 cup dair-yfree chocolate chips


Start by making the coconut layer. Mix coconut butter, honey and unsweetened coconut flakes together, then chill in the refrigerator for 20 minutes to harden.


Next, melt dark chocolate chips over a double boiler. Tip: If the chocolate gets clumpy, add a teaspoon of coconut oil to it. It will magically soften the chocolate into a glistening and smooth spread! Pour the chocolate over the coconut layer and chill for 20 more minutes.

Store your bars in the refrigerator and enjoy these chilled bars anytime you need a sweet treat!

Cinnamon Baked Butter Carrots by Becky Tarala

NOTES

This recipe can be prepped in advance and refrigerated until ready to bake. The amount of cinnamon can be increased to 1 teaspoon if you like extra cinnamon on your carrots. 

Easy Thanksgiving Carrot Recipe

INGREDIENTS

  1. 15 carrots, peeled and stems removed
    1/3 cup butter, softened
    1/2 cup sugar
    1 teaspoon kosher salt
    1/2 teaspoon ground cinnamon
    1/3 cup boiling water
    1 tablespoon orange juice
    Fresh parsley, chopped, optional

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Clean carrots and arrange in a 9" x 13" baking dish.
  3. Using an electric mixer, cream the butter, sugar, salt, and cinnamon. While the mixer is running, slowly add the boiling water and orange juice.
  4. Pour mixture over the carrots and cover the dish with aluminum foil. Bake for 90 minutes.
  5. Remove the foil and transfer carrots to a serving platter. Drizzle carrots with the melted cinnamon butter from the baking dish. Garnish with chopped parsley, if desired.
